New Hotels in Europe: Autumn 2026 – 2027

07.10.2026

Bourbon Courchevel 1850, France

Set in the former Les 3 Vallées, this hotel brings the atmosphere of a private London club to Courchevel: dark wood, velvet, soft lighting, a fireplace and a vinyl bar. Bourbon Courchevel belongs to the French group Chapitre Six, which also owns Hôtel La Ponche in Saint-Tropez, Cap d’Antibes Beach Hotel, Hôtel Saint Georges in Megève, Hôtel Monsieur George in Paris and a new hotel in Cannes due to open in 2027.

The slopes begin right at the door. Inside are 31 rooms designed by Pierre-Alexis Guinet. On the lower level, a spa built on the principle of contrast – a pool, sauna and hammam framed in stone and onyx – sets the tone for calm and recovery, with treatments chosen for their effectiveness, many designed to restore you after a day on the slopes. Bourbon has also given the resort centre one more excellent restaurant: the Italian Simonetta is led by Simone Zanoni, who since 2015 has headed the Michelin-starred Le George at the Four Seasons Hotel George V in Paris and previously worked with Gordon Ramsay. The bar has no playlists – just records and a fireplace to sip a cocktail by.

Bârma Courchevel 1400, France

This mountain retreat in Courchevel Le Praz – La Tania is the second member of Giboire Group’s luxury La French Collection, whose flagship, Les Cimes Bleues, opened in summer 2026 in La Baule on the Atlantic coast of France. Bârma stands among century-old pines in the village of La Tania, a quiet, secluded corner of Courchevel. The 75-room hotel offers ski-in / ski-out access to 600 km of slopes. Savoyard cuisine with wines from France’s leading houses and rare finds restores your energy, and the spa offers natural rejuvenating products and a pool. Children and dogs of all sizes are welcome.

Relais d’Amboise, Loire Valley, France

Amboise’s first five-star hotel occupies a one-hectare park with historic manor houses, overlooked by the royal Château d’Amboise, residence of Renaissance kings and the last resting place of Leonardo da Vinci. Relais d’Amboise (The Leading Hotels of the World) is 20 minutes from Château de Chenonceau and half an hour from the airport, with 63 rooms. Its troglodyte caves house a high-tech spa with a thermal suite, sauna, hammam, Jacuzzi, experience showers and an ice bath, and there is a swimming pool in the riverside garden. The kitchen is led by Nicolas Aubry, whose restaurant Ezia holds a Michelin star, serving local produce with Loire Valley wines. There is also a panoramic bar, underground wine cellars with a tasting room, and 16th-century silos converted for concerts, film screenings and light shows.

Bel Hôtel Oléron Thalasso & Spa – MGallery Collection, Île d’Oléron, France

On the island of Oléron in the Bay of Biscay, this hotel sits by a stunning sandy beach and a dense pine forest, the air filled with the scent of the sea, pine resin and pastries from its own bakery. Bright rooms have balconies or terraces with room service. Pierre Gagnaire oversees the restaurant Oyat, serving seasonal dishes from local suppliers, and at sunset his team hosts elegant beach picnics. The spa’s pride is a huge indoor seawater pool with swimming lanes, relaxation and hydromassage areas overlooking the ocean, alongside a Jacuzzi, hammam and sauna, 27 thalassotherapy rooms, a Technogym fitness centre and sports courts. Forest walks and meditation, seaside yoga and non-motorised water sports are part of the programme.

San Sonnea Family Dolomites, Italy

San Sonnea Family Dolomites invites guests to slow down to the rhythm of village life in the Dolomites. Its predecessor was opened in 1999 by the Hinteregger family from South Tyrol; the name has changed, but the owners and their gift for finding luxury in simple things remain. Closeness to nature shows in the materials (pine and oak), seasonal farm cuisine, age-appropriate children’s menus and restorative programmes in the new spa. Days are spent foraging wild herbs, helping in the garden, walking in forests and meadows and learning crafts, with outdoor lunches, picnics and open-top jeep excursions. Children feed cows, sheep, horses and ponies, alpacas, rabbits, chickens and geese, collect eggs for breakfast, learn to paint, make crafts from natural materials, build dams and boats, make local dumplings, churn butter and ride horses and ponies.

In autumn 2026 the adults-only San Sonnea Lodge Dolomites will join San Sonnea Family Dolomites, which welcomes even babies. Borgo San Sonnea Lake Garda, in a restored 18th-century farmstead on a hill above Lake Garda, follows the same philosophy.

La Citadelle Vauban, Emblems Collection, Brittany, France

The 16th-century Vauban citadel on Belle-Île, Brittany’s largest island, will become a boutique hotel with 71 rooms and 9 apartments in 2027, with two restaurants and a bar, event spaces, a 2,000 sq m wellness centre, a kids’ club and a museum dedicated to the citadel’s history.

La Réserve Firenze, Italy

Gilles & Boissier designed the one- to three-bedroom apartments; the largest is a duplex with a planted roof terrace overlooking the Arno and the city. Guests enjoy a 24-hour concierge, housekeeping, laundry and in-room breakfast, and can book a chef, personal trainer, yoga or tennis instructor, masseur or beautician.

In winter 2026/27, La Réserve Private Home Collection will also unveil a new chalet at the foot of the slopes in Val d’Isère. La Réserve – Chalet Val d’Isère (450 sq m) will have five bedrooms, an indoor pool, a hammam and a treatment room, with a manager, concierge, chef and housekeeper.

Dining is available in the restaurant or in your room, and the most luxurious accommodation is the Nobu Suite penthouse with a 38 sq m terrace.

Masseria Furnirussi, Emblems Collection, Puglia, Italy

A hotel on a former masseria in Serrano (Salento), 20 minutes from the beach and half an hour from Lecce. Set among Europe’s largest fig orchard and wild herbs are 60 rooms with pools and patios, a shared lagoon pool, a spa, a restaurant and a bar.

Mandarin Oriental Cristallo, Cortina, Italy

Hotel Cristallo (1901) once welcomed the cultural elite: Frank Sinatra, Peter Sellers and Saul Bellow stayed here, framed by forest and the Dolomites, close to the centre of Cortina d’Ampezzo. In winter 2026/27 the hotel opens as part of Mandarin Oriental Hotel Group (Italy), with 84 rooms including 30 spacious suites designed by Herzog & de Meuron, Italian-style restaurants and bars, and a spa with an indoor pool and rejuvenating treatments.

ZEST Hotel & Resort Ibiza, Spain

Since September 2026, bookings have been open for ZEST in Cap Negret on Ibiza’s west coast. Its 330 rooms and six villas cascade down a hillside, hidden by lush greenery and offering stunning sea views. Choose a room with a garden, a rooftop terrace or a private pool; villas for 8-10 guests have outdoor kitchens. Six restaurants and bars offer excellent al fresco dining, followed by time by the pools, in the spa or on the beautiful beaches steps away, while event spaces make it easy to combine work and leisure.

Fairmont Cheshire, The Mere, United Kingdom

A championship golf course with a century of history, a lake, a Gordon Ramsay restaurant, a superb spa and a ballroom for 1,000 guests all lie behind old red-brick gates. Despite its secluded setting, the hotel is just 30 minutes from Manchester (United Kingdom). Besides the Gordon Ramsay restaurant, famous for its beef Wellington, there is The Orangery for afternoon tea and evening oysters with Champagne, and a lounge serving dishes from around the world, including Indian cuisine. The spa has a pool with 20-metre lanes, a hammam, salt room, Finnish sauna and outdoor ice plunge, a gym and an outdoor sports area. It is a stunning setting not only for a getaway but also for weddings in an atmosphere of timeless luxury.

The Park Gstaad, a Four Seasons Hotel, Switzerland

A new chapter for Gstaad’s first five-star hotel, opened in 1910. Under Four Seasons management, the legendary The Park Gstaad offers 75 spacious rooms including 18 suites and six penthouses, seven restaurants (including a steakhouse, Japanese and Swiss) and lounges, a spa with Clinique La Prairie treatments, an indoor pool with Jacuzzi, a heated outdoor pool, a gym, a yoga and Pilates studio, courts for tennis, padel and pickleball, a kids’ club and event spaces. Best known as a ski resort, Gstaad also offers rafting, golf, cycling, horse riding and paragliding in summer. The concierges arrange cheese- and chocolate-making excursions, festival and tournament visits and trips to the sister hotel in Geneva (Switzerland).

Kimpton Quinta da Marinha, Cascais, Portugal

On the Atlantic coast, steps from beaches, pine forest and cliffs, the 188-room Kimpton Quinta da Marinha gives access to an 18-hole Robert Trent Jones golf course. It has tennis and padel courts, indoor and outdoor pools and a spa. Activities include surfing, invigorating lake swims, runs through the Sintra-Cascais Natural Park, walks in the old town and along the ocean, and tours of the museum quarter and the old citadel (Portugal).

CORI Hornbæk Hotel, Denmark

This luxury hotel in Hornbæk on the Copenhagen Riviera has a history: it was once a classic seaside badehotel and later a sanatorium. Its contemporary interiors are by Afroditi Krassa, known for her work with Rosewood and One&Only. Guests of CORI Hornbæk Hotel (The Leading Hotels of the World) stay in 77 rooms and five townhouses. Its longevity spa is rooted in Scandinavian traditions of contrast: an outdoor sauna, ice plunges, sound therapy, yoga and Pilates, and innovative treatments aimed at reducing biological age. The restaurant Cori Table is led by Brian Mark Hansen, formerly of the Michelin-starred Søllerød Kro, serving modern Nordic cuisine focused on the coast and the sea.

The hotel is an hour from Copenhagen airport (Denmark), 20 minutes from Kronborg Castle and the Maritime Museum in Helsingør and half an hour from the Louisiana Museum of Modern Art. Walks in the pine forest and heather-covered dunes, boating in Hornbæk Bay, surfing, kayaking, SUP and golf let you see the northern sun in a new light.

Octola III, Finland

Set amid the snowy forests of Finnish Lapland (Finland) at 500 metres, the region’s highest point, Octola III offers views across Finland, Norway and Sweden and the best northern lights. There is just one Grand Villa for six guests with full service (chef, manager and spa therapist), bookable in its entirety or as one or two suites. The contemporary Scandinavian villa was built from local materials to a design by Finnish firm UKI Architects.

Guests immerse themselves in Lapland’s nature, ride snowmobiles, watch reindeer and visit Kautokeino, the cultural capital of the Sámi, to learn about local crafts, history and reindeer herding. Wellness at the villa is based on the northern contrast of temperatures: a lakeside sauna and an ice plunge. The house has a billiard room, a bar and even a room for lasso-throwing, Sámi style. Octola III is 20 minutes by car from Rovaniemi airport (an hour by snowmobile or three by husky sled), with helicopter transfers available. Its exact location is revealed only to guests, and it can be reached by invitation only. It is part of Octola Private Wilderness, with 5 km of private roads.
